Preparation of Onion soup
Onion
- 5 Onions
Cut 5 Onions into fine strips.
Sauté
- 2.5 tbsp Clarified butter
- 2.5 tbsp Flour
Sweat in 2.5 tbsp Clarified butter until translucent.
Dust with 2.5 tbsp Flour and roast the flour briefly.
Cooking
- 1.25 L Soup
- Pepper, Marjoram, White wine, Salt
Infuse with 1.25 L Soup.
Season with Pepper and Marjoram.
Season to taste with a dash of White wine and Salt.
Soup garnish
- 5 slices Toast bread
- Cheese
Sprinkle 5 slices Toast bread with grated Cheese and bake in the oven at 180 °C for 10 - 15 minutes until crispy.
