Preparation of Onion soup

Onion

Cut 15 Onions into fine strips.

Sauté

Sweat in 7.5 tbsp Clarified butter until translucent. Dust with 7.5 tbsp Flour and roast the flour briefly.

Cooking

  • 3.75 L Soup
  • Pepper, Marjoram, White wine, Salt
Infuse with 3.75 L Soup. Season with Pepper and Marjoram. Season to taste with a dash of White wine and Salt.

Soup garnish

Sprinkle 15 slices Toast bread with grated Cheese and bake in the oven at 180 °C for 10 - 15 minutes until crispy.
