Ingredients for 30 persons: 4 kg Mushrooms, 20 Onions, 1 L Whipping cream, 250 ml Clarified butter, 200 ml Chives, 200 ml Parsley, 200 ml Lovage, 100 ml Flour, Salt, Pepper

Preparation of Mushroom sauce

Preparations

20 Onions fine dice. Cut 400 dag Mushrooms into 1 cm cubes.

Roast mushrooms

Heat 250 ml Clarified butter in a large pan. Sauté the onion and fry until golden brown. Then add half of the mushrooms and continue to fry, stirring constantly. When most of the water in the mushrooms has evaporated, add the rest of the mushrooms and finish frying.

Cook sauce

Dust with 100 ml Flour and roast briefly. Delete with 2 L Water. Add 1 L Whipping cream. Season with Salt and Pepper. Leave to simmer gently for another 15 minutes.

Herbs

Finely chop 200 ml Chives, 200 ml Parsley and 200 ml Lovage. Add just before serving.
