Preparation of Mushroom sauce
Preparations
Roast mushrooms
- 166.67 ml Clarified butter
Heat 166.67 ml Clarified butter in a large pan.
Sauté the onion and fry until golden brown.
Then add half of the mushrooms and continue to fry, stirring constantly.
When most of the water in the mushrooms has evaporated, add the rest of the mushrooms and finish frying.
Cook sauce
- 1.33 L Water
- 666.67 ml Whipping cream
- 6.67 tbsp Flour
- Salt, Pepper
Dust with 6.67 tbsp Flour and roast briefly.
Delete with 1.33 L Water.
Add 666.67 ml Whipping cream.
Season with Salt and Pepper.
Leave to simmer gently for another 15 minutes.
