Mapo Tofu

Ingredients for 4 persons: 400 g Tofu, 150 g Minced meat, 3 tbsp Soy sauce, 3 tbsp White wine, 30 g Ginger, 2 tbsp schwarze Bohnenpaste, 2 tbsp Oil, 1 tbsp fermentierte Chilibohnenpaste, 3 Garlic, 2 Jungzwiebel, Ginger, Tofu

Preparation of Mapo Tofu

Preparations

Finely chop 3 toe Garlic, 30 g Ginger and the white part of 2 Jungzwiebel (cut the green part into rings). Cut 40 dag Tofu into 2cm cubes and boil in salted water for 3 minutes.

Meat and sauce

Heat 2 tbsp Oil in the wok and stir-fry 150 g Minced meat. Fry Garlic, Ginger and white spring onions with it.

sauce

Stir in 2 tbsp schwarze Bohnenpaste and 1 tbsp fermentierte Chilibohnenpaste and deglaze with 3 tbsp Soy sauce and 3 tbsp White wine, boil down briefly and pour in 300 ml Soup.

Tofu

  • Tofu, Jungzwiebel
Add the Tofu and the green parts of the Jungzwiebel, remove from the heat, cover and leave to infuse for a few minutes.
