Preparation of Mapo Tofu
Preparations
- 40 dag Tofu
- 30 g Ginger
- 3 toe Garlic
- 2 Jungzwiebel
Finely chop 3 toe Garlic, 30 g Ginger and the white part of 2 Jungzwiebel (cut the green part into rings). Cut 40 dag Tofu into 2cm cubes and boil in salted water for 3 minutes.
Meat and sauce
- 150 g Minced meat
- 2 tbsp Oil
- Garlic, Ginger
Heat 2 tbsp Oil in the wok and stir-fry 150 g Minced meat. Fry Garlic, Ginger and white spring onions with it.
sauce
- 300 ml Soup
- 3 tbsp Soy sauce
- 3 tbsp White wine
- 2 tbsp schwarze Bohnenpaste
- 1 tbsp fermentierte Chilibohnenpaste
Stir in 2 tbsp schwarze Bohnenpaste and 1 tbsp fermentierte Chilibohnenpaste and deglaze with 3 tbsp Soy sauce and 3 tbsp White wine, boil down briefly and pour in 300 ml Soup.
Tofu
- Tofu, Jungzwiebel
Add the Tofu and the green parts of the Jungzwiebel, remove from the heat, cover and leave to infuse for a few minutes.
