Preparation of Leek and mushroom cake

Shortcrust pastry

112.5 dag Butter
112.5 dag Flour
112.5 dag Curd cheese

Roughly dice 112.5 dag Butter and crumble with 112.5 dag Flour. Add 112.5 dag Curd cheese and knead into a smooth dough. add a little flour if necessary. The dough should hardly stick at all. Dust with flour and chill for 30 minutes.

Cutting vegetables

15 sticks Leek
112.5 dag Mushrooms
112.5 dag Oyster mushrooms

Cut 15 sticks Leek in half lengthwise and cut into strips. Cut 112.5 dag Mushrooms and 112.5 dag Oyster mushrooms into slices.

Filling

300 ml Clarified butter
Salt, Nutmeg

Heat 150 ml Clarified butter in a pan. Sear the leek in the pan and fry for a few minutes, then move it to one side in the pan. Heat 150 ml Clarified butter again and fry the mushrooms for a few minutes. Season with Salt and Nutmeg. Leave the filling to cool.

Filling and topping

15 eggs
750 ml Whipping cream
750 g Sour cream

Roll out the dough to a thickness of approx. 5 mm. Grease a springform pan (or line a baking tray with baking paper) and dust with flour. Line with the dough. Pour the filling onto the dough. Stir 15 eggs, 750 ml Whipping cream and 750 g Sour cream until smooth and spread over the filling.

Baking

Bake in the oven at 200 °C for 40 minutes.
