Preparation of Lamb fillet with red wine sauce

Sauce
- 100 ml Water
- 100 ml Red wine
- 4 tbsp Whipping cream
Deglaze with 100 ml Red wine and stir well. Add 100 ml Water and simmer gently for 10 minutes. Pass the sauce through a sieve and refine with 4 tbsp Whipping cream. Add the meat to the sauce together with the juices and bring to the boil again briefly.
Serve
Serve the meat with the sauce and cooked polenta.

Return the lamb medallions to the sauce
