Preparation of Kässpätzle

dough

Mix 100 g Flour, ⅔ Egg, 50 ml Milk and etwas Salt to form a dough (set aside some of the flour and stir in as required). The dough should be very chewy and sticky. Under no circumstances should it drip.

cook

Boil salted water. Add the spaetzle in portions using a spaetzle strainer. Wait until the spaetzle rise to the top, leave to stand briefly. Remove with a sieve scoop and rinse in a pan of cold water. Continue until the dough is used up.

roast

⅔ Onion finely chop. Brown lightly in 2 tbsp Oil. Strain the spaetzle and add to the dish. Roast for a few minutes. Roughly grate 3.33 dag Mountain cheese and add to the spaetzle. Fry the cheese briefly while stirring.

season

  • Salt, Pepper
Season with Salt and Pepper. Cover and leave to infuse on a low heat for about 10 minutes. Loosen the base and stir in.
