Preparation of Hummus
Soak the chickpeas
- 200 g chickpeas
Soak 200 g chickpeas in plenty of cold water for 8 - 12 hours.
Cooking
Strain the chickpeas and cook for two hours with twice the amount of water.
This results in the formation of foam.
It is best to skim off the foam.
Then strain the chickpeas.
Serve
Serve as a spread or with olives and seasonal vegetables and herbs as a starter.
