Ingredients: Fried polenta for 20 persons

Ingredients: 1 kg Corn grits, 300 ml Clarified butter, 40 ml Salt

Preparation of Fried polenta

Cook

Boil up 5 L Water with 40 ml Salt. Stir in 1 kg Corn grits (fine). Boil up. Cover and leave to swell for approx. 15 minutes on the lowest setting (switch off the hob if using an electric stove), stirring several times.

Spread the mixture onto a tray or plate and leave to cool for 10 minutes.

Cut or cut out any shapes you like and fry in 300 ml Clarified butter until golden brown on both sides.
