Preparation of Egg spread

Egg white

Boil 1.67 eggs hard (approx. 8 minutes) and separate the egg yolk from the egg white. Chop the egg white into small cubes.

Egg yolk

Remove the rind from 0.17 Bread roll and mix with the egg yolks and 1 tbsp Whipping cream. Leave to rest briefly and pass through a fine sieve or puree with a hand blender.

butter

Stir 33.33 g Butter until frothy and mix with egg white, egg yolk and 1 chopped Gherkin. Season with Salt.
