Preparation of Creamed spinach
spinach
- 13.5 kg Spinach
Remove stem and root from 13.5 kg Spinach, blanch and strain.
(or use 900 g of strained frozen spinach and defrost).
roux
- 1.5 L Milk
- 150 ml Clarified butter
- 225 g Flour
- 7.5 cloves Garlic
- Nutmeg, Salt, Pepper
Heat 150 ml Clarified butter.
Stir in 225 g Flour and brown a little.
Stir in with 1.5 L Milk.
Bring to the boil until thickened.
With Nutmeg, Salt, Pepper, 7.5 cloves Garlic and seasoning.
finish
- 750 g Sour cream
Stir in the strained spinach and bring to the boil.
Refine with 750 g Sour cream.
