Ingredients: Creamed spinach for 30 persons

Ingredients: 13.5 kg Spinach, 1.5 L Milk, 750 g Sour cream, 150 ml Clarified butter, 225 g Flour, 7.5 cloves Garlic, Nutmeg, Salt, Pepper

Preparation of Creamed spinach

Remove stem and root from 13.5 kg Spinach, blanch and strain. (or use 900 g of strained frozen spinach and defrost).

Heat 150 ml Clarified butter. Stir in 225 g Flour and brown a little. Stir in with 1.5 L Milk. Bring to the boil until thickened. With Nutmeg, Salt, Pepper, 7.5 cloves Garlic and seasoning.

finish

Stir in the strained spinach and bring to the boil. Refine with 750 g Sour cream.
