Preparation of Cream of broccoli and corn soup

Preparations

Finely chop 10 Onions and coarsely chop 5 Broccoli. 1 kg Celery coarsely grate. Prepare 2 kg Sweetcorn (defrost frozen corn, strain canned corn).

Roasting & deglazing

Heat 200 ml Oil in a saucepan. Fry the vegetables in it. Deglaze with 10 L Soup, stir in well and bring to the boil. Season with 10 cloves Garlic, Pepper and Nutmeg. Simmer gently for 20 minutes.

Puree

Puree the soup in a blender or with a hand blender.

Finish

Refine with 500 ml Whipping cream and garnish with whipped cream and chives.
