Ingredients for 4 persons: ½ Broccoli, 200 g Sweetcorn, 1 Onion, 100 g Celery, 50 ml Whipping cream, 2 tbsp Oil, 1 clove Garlic, Pepper, Nutmeg

Preparation of Cream of broccoli and corn soup

Preparations

Finely chop 1 Onion and coarsely chop ½ Broccoli. 100 g Celery coarsely grate. Prepare 200 g Sweetcorn (defrost frozen corn, strain canned corn).

Roasting & deglazing

Heat 2 tbsp Oil in a saucepan. Fry the vegetables in it. Deglaze with 1 L Soup, stir in well and bring to the boil. Season with 1 clove Garlic, Pepper and Nutmeg. Simmer gently for 20 minutes.

Puree

Puree the soup in a blender or with a hand blender.

Finish

Refine with 50 ml Whipping cream and garnish with whipped cream and chives.
