Preparation of Coconut domes

Biscuit

Beat 3 eggs with 15 dag Sugar and 3 tbsp Water until very frothy. Fold in 12 dag Flour. Spread thinly on a baking tray on baking paper and bake for approx. 15 minutes at 180°C. Leave the sponge cake to cool, remove from the baking paper and cut out approx. 5 cm slices.

Coconut domes

Beat 4 Egg white with 10 dag Sugar and 1 tbsp Lemon juice until frothy. Fold in 10 dag sieved Powdered sugar and 20 dag Coconut flakes. Pipe the egg white mixture onto a baking tray, also in 5 cm hoods.

Parisian cream

Boil up 250 ml Whipping cream. Roughly chop 25 dag Cooking chocolate and dissolve in the hot whipped cream. Leave to cool and whip, preferably with a food processor, until the cream is much lighter in color.

Assembling coconut domes

Assemble the coconut domes from the sponge, Parisian cream and coconut topping. Melt 20 dag Cooking chocolate and 50 g Butter in a bain-marie and dip the coconut domes in it.
