Ingredients for 8 persons: 400 g Schlagobers, 4 Eier, 133.33 g dunkle Kuvertüre, 133.33 g helle Kuvertüre, 60 g Zucker, 2.67 leaves Gelatine

Preparation of Chocolate mousse

Melt 13.33 dag dunkle Kuvertüre and 13.33 dag helle Kuvertüre over steam.

whip warm/cold

Whisk 4 Eier, 6 dag Zucker in a bowl over steam with a whisk. Continue whisking with the mixer without steam.

gelatine

Soak 2.67 leaves Gelatine in cold water and melt by heating in cognac.

whipped cream

Beat 40 dag Schlagobers until stiff.

mix

Fold the chocolate (which should have cooled slightly) into the egg mixture and stir in the gelatine quickly. Finally, stir in the whipped cream.

chill

Cover and chill in a bowl for a few hours.
