Preparation of Chocolate mousse

chocolate

Melt 10 dag Cooking chocolate and 10 dag Milk chocolate over steam.

whip warm/cold

Whisk 3 eggs, 4.5 dag Sugar in a bowl over steam with a whisk. Finish mixing with the mixer (approx. 10 min).

gelatine

Soak 2 leaves Gelatin in cold Water and melt by heating in Cognac.

whipped cream

Beat 30 dag Whipping cream until stiff.

mix

Fold the chocolate (should already be slightly cooled) into the egg mixture, stir in the gelatine quickly. Finally, stir in the whipped cream.

chill

Cover and chill in a bowl for a few hours.
