Preparation of Chocolate mousse

- 1.67 dag dunkle Kuvertüre
- 1.67 dag helle Kuvertüre
Melt 1.67 dag dunkle Kuvertüre and 1.67 dag helle Kuvertüre over steam.
whip warm/cold
gelatine
- ⅓ leaves Gelatine
Soak ⅓ leaves Gelatine in cold water and melt by heating in cognac.
whipped cream
- 5 dag Schlagobers
Beat 5 dag Schlagobers until stiff.
mix
Fold the chocolate (which should have cooled slightly) into the egg mixture and stir in the gelatine quickly. Finally, stir in the whipped cream.
chill
Cover and chill in a bowl for a few hours.

Beat eggs with sugar over steam by hand until warm
Beat the eggs and sugar with a mixer until cold
Stir the melted chocolate into the egg mixture
Fold in the whipped cream
Pour the mousse into molds and chill
Portion out the chocolate mousse with a spoon
