Chanterelle soup

Ingredients for 4 persons: 250 g potatoes, 200 g Chanterelles, 7 tbsp Oil, 1 Onion, 100 ml Whipping cream, 2 tbsp Flour, Chanterelles

Preparation of Chanterelle soup

Vegetables and chanterelles

1 Onion finely chop. Coarsely dice 25 dag potatoes and coarsely dice 10 dag Chanterelles. (You can also use larger chanterelles for the soup, but smaller ones for the soup garnish).

Roast & infuse

Sauté the onion, chanterelles and potatoes in 5 tbsp Oil and continue to fry for a few minutes while stirring. Dust with 2 tbsp Flour and infuse with 1 L Water. Simmer gently for half an hour.

Strain

Puree the chanterelle soup with a hand blender and pass through a sieve. Add 100 ml Whipping cream to the soup and bring to the boil again.

Soup garnish

Fry 10 dag Chanterelles (use smaller mushrooms here) in 2 tbsp Oil over a high heat until the escaping Water has evaporated again. Serve the fried Chanterelles as a soup garnish directly on the plate.
