Ingredients for 10 persons: 1.67 White cabbage, 3.33 Puff pastry, 6.67 Onions, 6.67 Carrots, 133.33 ml Clarified butter, 3.33 eggs, 100 ml Soy sauce, Caraway, Pepper

Preparation of Cabbage strudel

Preparations

Cut 6.67 Onions and 1.67 White cabbage into strips. 6.67 Carrots coarsely grate.

Cabbage filling

Heat 133.33 ml Clarified butter in a pan. Sauté the onion and carrots in the pan. Add the cabbage and sauté for a few minutes until it collapses. Deglaze with 100 ml Soy sauce and season with Caraway and Pepper. Leave the filling to cool.

Fill cabbage strudel

Spread 3.33 Puff pastry. Roll out a little more if necessary. Cover a third of the pastry surface in the middle with the cabbage filling.

Close the cabbage strudel

Fold in one side of the dough, spread this side with 3.33 whisked eggs, fold the other side over and press down a little. Press the edges down a little and brush with the egg again.

Bake cabbage strudel

Bake in the oven for 30 minutes, start at 220 °C, reduce to 200 °C after 10 minutes.
