Preparation of Brioche

Dough
Pour 50 dag Flour into a bowl.
Mix with the yeast, 4 Egg yolk, 1 Egg, 12 dag Sugar, 1 package Vanilla sugar, juice of half an Lemon, 2 cl Rum, 8 dag more liquid Butter and 0.13 L Milk to form a smooth dough.
Go
Leave the dough to rise twice, kneading in between.
Shapes
- 1 Egg
Shape the dough into three strands for each plait and braid them into a plait.
Spread baking paper on a baking tray.
Place the plaits on the tray, cover and leave to rise for 10 minutes.
Whisk 1 Egg and brush the plaits with it.
Baking
Bake the plaits at 180 °C for 30 - 40 minutes.

Knead the ingredients in a food processor.
Add a little more flour if required.
Braid the three strands into a plait.
For each brioche plait, divide the dough freely.
