Ingredients for 4 persons: 250 ml Milk, 3 eggs, 150 g Flour, 100 g Blueberries, 2 tbsp Sugar, 1 tbsp Butter, 1 pinch Salt, Powdered sugar, Whipping cream

Preparation of Blackberry pie

Snow

Separate 3 eggs and beat the egg whites with 1 pinch Salt and 1 tbsp Sugar until stiff.

Dough

Mix 15 dag Flour, 250 ml Milk and the egg yolks with 1 tbsp Sugar. 10 dag Blueberries (preferably fresh from the forest) and fold in the beaten egg whites. The consistency of the dough should be firmer like a pancake dough.

Baking

Melt 1 tbsp Butter in a pan. Pour the batter into the pan with a ladle, but do not spread it as you would with pancakes. 3-4 pieces are sufficient in a large pan. Reduce the heat and turn after a few minutes.

Serve

  • Powdered sugar, Whipping cream
Serve with Powdered sugar and Whipping cream.
