Preparation of Beef soup
meat
- 8 L Water
- 2 kg Beef for soup
Boil up 8 L Water.
Add 2 kg Beef for soup.
Simmer gently for 50 minutes and skim off the foam.
spices
- 2 Onions
- 6 leaves Lovage
- 10 Juniper berries
- 20 Peppercorns
- 6 Bay leaves
Add 10 Juniper berries, 20 Peppercorns, 6 Bay leaves, 6 leaves Lovage and 2 Onions with the peel to the soup and simmer for a further 50 minutes.

- 8 Carrots
- 1 Celery
- 4 Yellow carrots
- 4 Root parsley
- 1 Leek
- Parsley
Add 1 Celery, 8 Carrots, 4 Yellow carrots, 1 Leek, Parsley, 4 Root parsley.
Simmer gently for another 50 minutes.
strain
- 4 tbsp Salt
Remove the vegetables and meat.
Strain the soup, discard the herbs and spices.
Season with 4 tbsp Salt.
serve
- Chives
Chop the meat and vegetables, add to the soup and refine with chopped Chives.
