Ingredients: Beef soup for 4 persons

Ingredients: 1 kg Beef for soup, 4 Carrots, ½ Celery, 2 Yellow carrots, 2 Root parsley, 1 Onion, ½ Leek, 2 tbsp Salt, 3 leaves Lovage, 5 Juniper berries, 10 Peppercorns, 3 Bay leaves, Parsley, Chives

Preparation of Beef soup

meat

Boil up 4 L Water. Add 1 kg Beef for soup. Simmer gently for 50 minutes and skim off the foam.

spices

Add 5 Juniper berries, 10 Peppercorns, 3 Bay leaves, 3 leaves Lovage and 1 Onion with the peel to the soup and simmer for a further 50 minutes.

vegetables

Add ½ Celery, 4 Carrots, 2 Yellow carrots, ½ Leek, Parsley, 2 Root parsley. Simmer gently for another 50 minutes.

strain

Remove the vegetables and meat. Strain the soup, discard the herbs and spices. Season with 2 tbsp Salt.

serve

  • Chives
Chop the meat and vegetables, add to the soup and refine with chopped Chives.
