Preparation of Beef soup
meat
- 2 L Water
- ½ kg Beef for soup
Boil up 2 L Water.
Add ½ kg Beef for soup.
Simmer gently for 50 minutes and skim off the foam.
spices
- ½ Onion
- 1.5 leaves Lovage
- 2.5 Juniper berries
- 5 Peppercorns
- 1.5 Bay leaves
Add 2.5 Juniper berries, 5 Peppercorns, 1.5 Bay leaves, 1.5 leaves Lovage and ½ Onion with the peel to the soup and simmer for a further 50 minutes.
vegetables
- 2 Carrots
- ¼ Celery
- 1 Yellow carrot
- 1 Root parsley
- ¼ Leek
- Parsley
Add ¼ Celery, 2 Carrots, 1 Yellow carrot, ¼ Leek, Parsley, 1 Root parsley.
Simmer gently for another 50 minutes.
strain
- 1 tbsp Salt
Remove the vegetables and meat.
Strain the soup, discard the herbs and spices.
Season with 1 tbsp Salt.
serve
- Chives
Chop the meat and vegetables, add to the soup and refine with chopped Chives.
