Preparation of Baked wild garlic and potato pasta

Potato dough

1 kg floury potatoes boil or steam until soft. Peel and finely press with a potato press. Finely puree 150 g soft Butter with 30 g Wild garlic. Knead the potatoes with 20 dag Flour, 5 dag Semolina, half of the wild garlic butter, 2 Egg yolk and salt into a smooth dough.

Shape noodles

Shape the dough in portions into 5 cm thick rolls. Divide these into evenly sized pieces using a pastry card. Shape the pieces into noodles with both hands.

Bake

Place the potato noodles in a baking dish and top with the remaining wild garlic butter. Bake in the oven at 200°C for approx. 20-30 minutes.
