Asparagus maki

Ingredients for 4 persons: 400 g Asparagus, 250 g Sushi rice, 2 tbsp Rice vinegar, 6 leaves Nori, 1 tsp Sugar, 1 tsp Salt, Sushi rice, Soy sauce, Wasabi paste, Pickled ginger leaves

Preparation of Asparagus maki

Cook rice

Wash 250 g Sushi rice in a sieve. Place in a pan with 500 ml cold Water and bring to the boil. Switch off the hob (reduce the gas setting to the lowest heat) and leave the rice to soak for 30 minutes.

Season rice

Dissolve 1 tsp Sugar and 1 tsp Salt in 2 tbsp Rice vinegar and spread over the rice. Leave the rice to cool.

Cooking asparagus

Cook 400 g Asparagus in Salted water pithy.

Shape maki

6 leaves Nori (red Japanese seaweed leaves) are required. Place an algae leaf on a bamboo mat and spread some Sushi rice on it. Place two asparagus spears at each end of the sheet and roll up. Cut the roll into 2 cm thick slices.

Serve

  • Soy sauce, Wasabi paste, Pickled ginger leaves
Serve with Soy sauce and Wasabi paste as well as Pickled ginger leaves.
