Preparation of Apple snake

Curd cheese shortcrust pastry

Knead 20.83 dag Butter, 20.83 dag Flour and 20.83 dag Curd cheese into a dough. Leave to rest in the fridge for 1 - 2 hours.

Apple filling

Cut 1.25 kg apples into small pieces, mix with 208.33 g Sour cream and 83.33 g Hazelnuts and season with Cinnamon.

Apple snake

Divide the dough into 3 parts and roll out thinly. Cover each part with a third of the apple filling in the middle and fold in the sides. Whisk 0.83 Egg, fix the dough sheets with it and brush the strudel with it. Bake the apple snakes in the oven at 180°C for 30-40 minutes.
